Leek and potato hash

leek and potato hash

Like hash? Like leak and potato soup? Ever want to combine them? No? Me neither, but this hash is great for two parts of your garden that get harvested together, and a great side dish with a meat for dinner, or eggs for breakfast. Even better with hollandaise sauce.

Ingredients!

3 medium potatoes cooked and chopped
4
oz of sausage meat
1 can of beans
1 cup of chopped leeks(my where frozen, but from the garden)
1 teaspoon sage
1 teaspoon paprika
1 teaspoon thyme
1 teaspoon garlic salt
1/2 teaspoon pepper
1 tablespoon of oil

Add oil to a frying pan, bring up to medium high heat, and then add your sausage. Brown and breakup the sausage until it is in small pieces and crispy on the edges.

Add in your leeks, cook until they start to brown. Add in all the spices, mix well, and cook for a minute. This allows the spices to heat up, and intensifies the flavor. Now add the potatoes and beans of choice (I like chickpeas, but any bean will do). Keep on cooking until all ingredients are heated through, then serve and enjoy.
