So I made Alton Brown’s meatloaf recipe. It was amazing, and I will be making it again. Still, I had a lot of leftovers. Which was awesome, but I can only make so many meatloaf sandwiches. So why not make some wraps? Here are three different ways I used this great source of meaty goodness.
Wrap version one!
Egg peppers and onion meatloaf wrap
Dice up some peppers and onions, then brown them with some oil or butter in a fry pan. Once they are brown, crack a couple eggs right on top, and cook the eggs until done to your liking. I like mine with a runny yolk, it adds a creaminess to the wrap. A little before your eggs are done, top the whole mess with cheese and let it melt. If you have any of the glaze leftover from making the meatloaf, spread that on the tortilla, and then place a thin slice of the meatloaf in the middle. Top with the eggy goodness! Then roll it up. Warm them in the toaster oven or microwave before serving.

Meatloaf sauerkraut swiss cheese wrap!
On this tortilla, slather on your sauce of choice. I still used leftover glaze, but I think that thousand island dressing would be great for a mock Ruben. First a slice of meatloaf, then layer on sour kraut, and then swiss cheese. Roll keep roll’n. Warm them in the toaster oven or microwave before serving.

Meatloaf wrap with Gouda cheese, cherry tomatoes, and ranch!
This one has a fresh kick from the cherry tomatoes! Cut those little guys in half one at a time, or between 2 plates at 10 at a go to save time. Whichever way makes you happy. Once the deed is done, spread ranch on the tortilla and then put the meatloaf on top. Then stack on the cherry tomatoes, top with some thin slices (or shreds of) the cheese. Roll, fold, or make into a hat (just kidding), but once it is all sealed, heat it up and enjoy!
