It’s July and peaches are in full swing! There is something amazing and special to me about the smell of fresh fruit. It’s like I can smell the sun rising out of them, and that never fails to makes me smile.

Which is great! But then I get over-excited and buy too many for the family to eat. I know, a curse of too much fresh fruit. Darn! So how to make the best of it and use them up before they go south?

Victory pineapple cranberry apple salad with ginger and mint!

This fruit salad is great! It is best to make it the morning that you intend to eat it, but will last up to five days in your fridge with no ill effects. You make it in the morning (or the night before) because it gets a little better as the cranberries soften a little in the fruit juices of the apple and pineapple, and the flavors combine.

Warm kale apple salad Healthy and tasty. Not joking.

Fall is coming! Why not take what we have harvest and make a salad. What kind? Warm salad. WARM KALE SALAD. When I first came across the concept, it didn’t make sense to me. I thought “All salads must be cold”, otherwise they would lose their crunch! But as the cool weather sets in, this salad warms the heart and the hands. It’s great for those days where you want a salad, and you want to be warm.
