One recipe, two ways: means half the effort, right?

So this recipe came about because I wanted at the same time a sloppy Joe and a gyro. ‘Twas also the middle of summer and I had plenty of veggies coming in from the garden!

The filling makes enough for two, or if you make it on Sunday you can save it in your fridge and on Friday make a Greek style pizza that recipes will also be included

What you will need!

4 oz pork sausage
1 lb ground beef
1 can of chickpeas
1 onion
1/2 of a lemon
2 cups of water
1 beef stock cube
2 tablespoon Greek seasoning
2 tablespoons cornstarch
2 cloves of garlic
1 handful of feta cheese
some olives (optional)
flour tortillas or other starch of choice
some tomato cucumber salad
tzatziki sauce

Filling

Chop your onion into half inch cubes and place them in a pan of frying. Lightly brown them, then add the meat. Once it is all crumbled and cooked, add in the chickpeas and Greek seasoning. Let cook for 2 minutes, this will let the spice flavors open up. Add in the water and stock cube, then bring the whole thing to a boil. Once boiling, pour in the cornstarch mixed with water to make a slurry to thicken the ground meat mixture.

Tomato cucumber salad

Best tomato you can get or grow(chopped)
Olives (optional)
1Cucumber (chopped)
1/4 onion (chopped)
1/2 lemon (minus one table spoon)
salt and pepper to taste.
Mix in a bowl and admire all the color

Tzatziki

1 cup Greek whole milk yogurt
1 English cucumber, seeded, finely grated and drained
2 cloves garlic, finely minced
1 teaspoon lemon zest plus 1 tablespoon fresh lemon juice
2 tablespoons chopped fresh dill
Kosher salt and freshly cracked black pepper

Mix in all in a bowl and let sit as long as possible for the flavors to marry (minimum 1 hour).

To assemble.

In your or on your starch of choice (here I have used a flour tortilla because it was inexpensive).

First put on the tzatziki, then the meat mixture to hold it in place. Cover it with the salad, and then I top it with feta cheese. Roll it up and let it transport you and your taste bud to some place new and exciting.

This not only goes great on bread but I have mixed it with pasta and also put on pizza dough! Each time it has turned out well. If you have any leftover meat, salad, and sauce SAVE IT! Keep it in the fridge for a couple of day so everyone forgets about it, and then add a twist. Bang! You have a quick and flavorful meal you didn’t have to stress over. If you do it right, each variation has a whole new look. Doing it this way helps stretch time, money, and energy with out being boring. I hope you and your Family enjoy this recipe. ~Vee

Greek pizza

Pizza dough (hopefully homemade, but store bought will do in a pinch)
Leftover meat filling
Feta Cheese
Tomato cucumber salad
Tzatziki

Preheat your oven to 425 . Then a with a rolling pin you could be off an assalent with. Or if you finished that bottle of wine you can use that to roll out your dough.

Pizza dough

5 cups Flour
1 tbsp Salt
1 tbsp Yeast
2 cups Water
4 tbsp Olive oil

Place everything in to stand mixer and let run until smooth dough is formed. Let raise for a hour then bake.

Put it on a cookie sheet and put your meat on and the cheese.

bake for 20 minutes

Then sprinkle the salad on top
Spread on the Tzatziki
Enjoy this lovely use of veggies with your family and friends. It becomes a great Victory to share!
