Victory pineapple cranberry apple salad with ginger and mint!

This fruit salad is great! It is best to make it the morning that you intend to eat it, but will last up to five days in your fridge with no ill effects. You make it in the morning (or the night before) because it gets a little better as the cranberries soften a little in the fruit juices of the apple and pineapple, and the flavors combine.

I eat this for breakfast, or for a afternoon snack. I also like this salad because the ingredients can be found (in my area) from December through May. It’s great when the garden is not giving much in the way for sweet treats. Everyone in my family likes it, I hope you give it a try.

What you will need!

1 pineapple sliced and diced
3 apples diced
3 stalks of celery sliced
1/3 cup Cranberries
1/3 cup pumpkin seeds
1 teaspoon ginger
1 teaspoon mint

In your favorite mixing bowl, add all the the fruit that needs some aggression taken out on it. Use this time to slice, dice, or chop all those wildly fruits. Think of it as meditation, I love to chop things.

For the celery, cut into 1/2 moons

Processing the pineapple takes a bit more: first rip off the green pointy top. Peel off some of the bottoms leaves to expose the roots. Yes there are roots there. Yea, now you get a free house plant. Put it in a pot with dirt and leave somewhere with full light exposure.

Back to the salad: Cut off the top and bottom of the pineapple to have a flat surface, then cut off the outer rind. I find it’s easiest to cut in long thin slices from the top to the bottom.

Then quarter the flesh of the pineapple

Slice from the top to the bottom on the pointy bits of each quarter to cut out the woody center

Then slice and then dice

Once all your fruits are hacked into pieces, toss them in to your bowl of awesome. If you don’t have a good mixing bowls please get one. They can make or break a kitchen. I love the one down below they come with lids, and are made in the U.S.A.

Finally add in the pumpkin seeds, cranberries, and spices. Stir together with vigor, then enjoy!
